Anyone looking for sophisticated systems and machines to make sweet treats or process coffee to perfection should take a look at Selmi Group. They have machines of all kinds and thus the perfect solution for every manufacturing process. Over the decades, more and more knowledge has been gathered, which is now reflected in various processing mechanisms.
The company was founded by Renato Selmi. in 1965, he began with the production of hazelnut paste. This is popular in pastries and especially in pralines or filled chocolate bars. Soon, however, the main focus shifted to the processing of chocolate.
By the time his son joined the company, many things had already changed. There were more and more new techniques and technologies that improved and simplified processing.
The company quickly became known nationally and also internationally with its cleverly designed machines and quickly rose to become one of the leading companies for the development and production of machines for processing chocolate, roasted coffee and pulses.
Specifically, they sell, for example, coating machines, automatic tempering and moulding equipment, ball mills for the production of fat-free masses or glace, equipment for grinding nuts into a smooth paste and systems with which praline moulds or the like are poured and filled automatically and in no time at all. All these machines are produced in the company's own manufacturing plant.
Of course, we are particularly interested in the tempering machines from Selmi Group. All you have to do is set a programme and the couverture is optimally prepared for processing. In less than 10 minutes, 12 kg of couverture can be tempered. Since this saves a lot of time and guarantees perfect couverture, you can take care of something else in the meantime. We also have several such machines in our course room, which save us some work and always deliver freshly tempered couverture.
The tempering works via an integrated heating and cooling system, and the chocolate is repeatedly transported up and down. The tempered couverture can be portioned directly into the appropriate mould. For this purpose, the couverture flow is controlled with the foot pedal. This leaves your hands free to hold the praline, chocolate bar or figurine mould underneath. For a chocolate bar, only the excess chocolate is scraped off, then everything is placed in the refrigerator.
For beautiful hollow praline bodies or filled bars, only part of the filled couverture is needed. Manually or with the included heated vibrating table, the excess chocolate is emptied out and fed in again. The screw conveyor transports it back to the top, via which cocoa nibs, freeze-dried fruit or nut pieces can also be added.
The poured moulds are refrigerated and then finished with a ganache or other filling. After a short resting time, the mixture is lightly sponge-covered. Then the treats can be perfectly sealed. To do this, the mould can be covered again with couverture straight from the tempering machine. Spread it well with a metal horn and wipe off the excess.
This technique is not so suitable for hollow spheres. Here we recommend the use of a piping bag. Fill the bag with the tempered couverture and cut off the tip. In this way, the small openings can be filled in a targeted manner, and the leftover couverture is simply returned.
After about half an hour of cooling, the chocolate is nice and firm and can be moulded. To do this, twist and move the moulds a little, remove the clamps if necessary. Figure moulds are carefully opened and pralines or chocolate bars are turned onto the work surface and lightly tapped if necessary. Due to the perfect tempering of the couverture, the creations release easily from the mould and shine beautifully.
Of course, the entire appliance needs to be cleaned after extensive use. However, this is very easy, as the easy accessibility means that all areas can be cleaned easily and contamination is avoided. For example, the entire feed screw can be removed and cleaned individually.
In order to achieve the best results, the purchase of an appropriate machine also includes a short training course. During this training, the application is explained in detail and all questions are answered. So nothing can go wrong!
