The specialist for kitchen utensils from Switzerland offers several high-quality ceramic bread baking pans in addition to a few smaller utensils. Due to the stored heat and the higher humidity in the pot, you get incredibly crispy bread.

Schwarz Kitchen Selection SA is one of the largest Swiss manufacturers of all kinds of kitchen utensils. Cutlery, crockery, tools, wines and much more are now sold all over the world. The company inspires with the best quality and innovative design. Its headquarters are in Vernier, Geneva, and it has its own shop in Rossens.
In addition to its own products, Schwarz Kitchen also sells the versatile ceramic bread pans from Emile Henry. This is a French manufacturer with many years of experience. The ceramic stores the heat of the oven and ensures optimal humidity inside the mould. This is how wonderfully crispy breads turn out, but braised dishes or tajines are also made in similar pans.
Crispy baguettes
600 g white flour
75 g wholemeal wheat flour
21 g fresh yeast
1 tsp honey
300 ml water
15 g salt
3 tbsp olive oil
Put all ingredients up to and including water in a large bowl and knead for 3 to 8 minutes. Then add salt and olive oil and knead for another 3 to 8 minutes to form a smooth dough. Form a ball and place it in a lightly oiled bowl. Cover the dough and let it rest for an hour, then take it out again and divide it into three pieces weighing about 320-350 g each. Fold each piece into an oblong shape and roll it slightly to form a stick. Flour the mould well, especially the first few times, later the ceramic will stick less and less. Then place the three dough pieces in the tin and put the lid on top.
After an hour the dough pieces have risen again a little, cut them diagonally with a sharp baker's knife just before baking. Hold the knife at a slight angle to create flaps of dough that will rise again. Put the lid back on the tin, put it in the oven preheated to 240 degrees and bake the baguettes for 30 minutes. Thanks to the small holes in the lid, there is always optimal humidity inside for crispy bread. To preserve the crust, remove the lid when you take out the tin. After 10 minutes, you can remove the baguettes and leave them to cool on a rack or enjoy them warm straight away.
The mould should now cool completely, then it can be cleaned in the dishwasher or with a non-abrasive sponge. If some baguette crust still sticks to it despite the flouring, soak the mould in water and then rinse it.
For round or elongated breads, there are also bread baking moulds from Emile Henry, which impress with their excellent baking properties, easy handling and elegant design. In a bread bag, the finished baked goods stay fresh and crispy for a long time.
Schwarz Kitchen also offers the perfect accessories for other treats. A simple but impressive way to decorate your Guetzli is to emboss a sweet pattern. To do this, roll out the well-chilled Guetzli dough to the desired thickness. Then, using a rolling pin, roll the pattern of your choice over it once with a little pressure. For example, small hearts or stars can be imprinted. The Guetzli are then cut out normally and placed on baking paper. Depending on the dough, it is best to dip the cutters in water in between. This makes it easier to remove the dough without having to do much to help, otherwise the pattern may be slightly dented.
Delicious Gugelhupfe can also be quickly and beautifully shaped with the innovative moulds from Schwarz Kitchen. Before baking, grease and flour the mould a little, so that the Gugelhupf can be shaped even better. Alternatively, a baking spray can be used, and the mould is non-stick coated so that nothing sticks. Since the moulds are made of aluminium, they have excellent baking properties and can be used at up to 230 degrees. To avoid deformation, however, the mould should only be placed in the oven when filled.
Once the Gugelhupf has been baked and removed from the mould and the mould has cooled down completely, the latter is cleaned by hand. This way it stays beautiful for a long time and can be used countless times for beautiful Gugelhupfe. Schwarz Kitchen offers exceptional Gugelhupff moulds, the resulting delicacies delight with their modern shape. In addition, many of the moulds are suitable for a delicious glaze. Sloping grooves or gradations make for a great pattern of cake icing, egg white icing or homemade fruit icing.
