This success story began about 40 years ago. At that time, the company started as a plastic manufacturer. They mainly produced plastic containers for bakeries, nothing was seen of the sophisticated shapes and tools at that time. The containers served various purposes, the doughs produced were put in them to ferment, the different types of flour were stored in other boxes and finally the finished baked breads and biscuits were stored, transported and delivered in the containers.

Pavoni worked closely with the various bakeries and always tried to find individual solutions and adaptations to the respective needs.

From plastic, the company then moved on to a special plastic, silicone. This material cannot be used to make solid containers, but it can be used to make various soft shapes. Today, these are one of the specialities of Pavoni. With a wide range of shapes, there is something for everyone and for every project. Whether small and many-part for filigree pâtisserie or large and well-formed for a delicious cake, everyone will find something here.

Silicone moulds are incredibly versatile. Thanks to the resistant material, the filled masses can be dried, baked or frozen. Most moulds are temperature resistant from about -20 to +230 degrees, so you can put ice cream masses but also hot caramel into the same mould. The mould is nice and soft and movable. If the frozen cream or cooled caramel does not want to come out, simply turn the mould outwards. Afterwards, it is easy to clean in the dishwasher.

But these moulds for cakes and pâtisserie are not the only speciality made of silicone. The range also includes sophisticated baking mats for choux pastries such as éclairs, choux or cream puffs and moulds for popsicles.

Another plastic, polycarbonate, is moulded by Pavoni for chocolates. The material is transparent and hard, so you can easily see the surface of the chocolates, for example, to paint them in advance. Unlike silicone, polycarbonate offers ideal conditions for the couverture. Since it does not give, the filled couverture can contract as it cools and can then be perfectly ejected from the mould. It also gives it a wonderful sheen.

The company is also known for its refined cake rings. The low rings with small holes, for example, were designed for extra crispy short pastry bases. The holes allow the hot air in the oven to reach the pastry better and it bakes beautifully evenly.
