We have for you the perfect recipe for Christmas cupcakes. It's easy as pie. So don't wait long, grab your kids and get started.
For 12 cupcakes you need the following ingredients:
360 g flour240 g
sugar9g
cocoa powder9
g Speculoos spice
3 tsp. baking powder3
.75 dl. milk30
g. canola oil250 g.
mascarpone40 g.
powdered sugar2
tsp. cinnamon200
g. whole cream1
pck. Cream stiffener
Preheat the oven to 180° C top/bottom heat or 160° C convection oven2
. Prepare the muffin tray with 12 cupcakes cups3
. Mix the dry ingredients such as flour, sugar, cocoa powder, speculaas spice and baking powder in a bowl4
. In a separate container, stir together the milk and oil and add this to the dry ingredients5
. Stir the mixture until well combined and then pour the batter into the prepared cupcakes cups. Fill only 2/3 of the cups with batter at a time. Otherwise the cupcakes will overflow during baking7
. Bake the cupcakes for about 20 minutes in the middle of the oven8
. Take a toothpick and do the chopstick test to see if the cupcakes are baked through9
. Let the muffins cool completely on a cooling rack and prepare the topping during this time10
. Mix the mascarpone, powdered sugar and cinnamon by hand until the mixture is well blended11
. Then whip the cream together with the cream stiffener until stiff and carefully fold the whipped cream into the mascarpone cream. 12.
The topping is now ready and can be refrigerated until use13
. You can now decorate the cupcakes with the cinnamon topping and if you like, sprinkle some cinnamon over the topping.
