Mix some sepia ink into your bread or pasta dough or stir it into risotto and other dishes. This way you will get an intense black color as well as a wonderful fish aroma. You can also use the paste to refine sauces or make an exceptional ice cream. The ink paste is packed in 8 small bags of 4 g, so it has a particularly long shelf life and you can open only as much ink as needed for the dish. So you create not only delicious but also slightly fishy treats.
400 g durum wheat semolina
115 g whole egg
4 g sepia ink
Mix the sepia paste with the whole egg and put the durum wheat semolina in a pasta machine. Now keep adding a little of the whole egg and ink mixture and keep mixing. Alternatively, you can knead the dough by hand and then roll it out, but the use of a pasta machine is recommended. Once everything is well mixed, the pasta is pressed into shape with the machine. So only from time to time the pasta must be cut off. The homemade pasta needs only about 3 minutes in boiling salted water until it is firm to the bite and can be enjoyed.
You can also add the cuttlefish ink to a sauce, an Asian soup or to your risotto. This way you add a delicious fish flavor to your dish. To do this, you should use about 1 g of ink paste for 100 g of the dish, but this may vary according to taste.
Even a bread or braid can be flavored and easily colored with the sepia ink. For this purpose, the braid or bread dough is kneaded ready, then the black paste is mixed in briefly. About 1 g of the ink is added to 180 g of dough, so the flavor is not too intense, but baking turns the color to a dark gray. This is how you create the perfect pastry for Halloween, for example, a black braid or black burger or hot dog buns. Fish and meat also get a delicious taste as well as a dark color by adding a little sepia ink to the marinade.
