Pectin NH is a high-quality, natural gelling agent that has been specially developed for the production of shiny and stable fruit toppings, fruit coatings, mirror ice cream and fruit fillings (fruit pits, fruit fillings). It is ideal for use in confectionery and patisserie products such as tarts, cakes, desserts and pastries. This pectin NH is characterized by its high gelling power and excellent stability. It is also ideal for making jams with a thick texture. All products processed with this pectin can be safely kept and stored in the freezer after production without the taste or consistency changing during the defrosting process. Pectin NH produces a uniform, clear gel, which ensures a perfect consistency and a glossy finish on your baked goods. It is also easy to use and enables simple handling during preparation. The pectin is mixed with the sugar and slowly drizzled into the watery, fruity preparation and heated while stirring vigorously. Now stir until a uniform mixture has formed. The pectin dissolves quickly at 80 - 85 degrees. Gelling takes place after heating. The pectin reaches complete and final solidity after 24 hours. For 1 kg of the total weight, 5 to a maximum of 15 g of pectin is required. Pectin has very good freezing properties and is vegan. Pectin NH is a vegetable pectin mixture that can be used universally. It is particularly suitable for jellied cake toppings such as mirror ice cream, as well as for fillings with fruit pulp or for fruit fillings, fruit pits and fruit fillings.
