Fructose, also known as fruit sugar, is a naturally occurring monosaccharide that is found in many foods. It is mainly found in fruits and some vegetables. 

What is fructose and which foods contain fructose?

Fructose differs from table sugar (sucrose), which is a compound of glucose and fructose. While sucrose is classified as a disaccharide, fructose is a monosaccharide that occurs naturally in many fruits and some vegetables. The sweet taste of fructose is more intense than that of glucose, which means that foods with a high fructose content often have a higher sweetening power. 

Foods that are high in fructose are mainly fresh fruits such as apples, pears, mangoes and grapes. These fruits not only contain fructose, but also essential nutrients that are important for a balanced diet. 

Fructose occurs naturally in fruits, honey and certain plants and is a sugar with a sweetening power that is greater than that of sucrose, the white powdered sugar that everyone knows. It is therefore of particular interest for use in low-calorie (dietary) foods. It also provides a sweeter taste than conventional sugar and contributes to the flavouring of food preparations.

Use and dosage

Can be used hot or cold and replaces conventional sugar. It caramelizes at 100°C.

The fructose powder is ready to use and can be incorporated at any stage of the recipe without changing your recipes. It is ideal for baked goods and confectionery. The dosage depends on your taste and requirements. 50 g of fructose replace 100 g of white sugar.
