You can use dried wild garlic to create wonderfully flavorful breads and aromatic sauces. With just one or two tablespoons, you can also enjoy the delicious wild garlic flavor in summer, autumn and winter, even though the plant can only be harvested in spring. Mix some dried wild garlic into your flour and then use it to bake bread to give it the incomparable aroma of spicy wild garlic as well as the great green color. Sauces, marinades, soups and herb butter can also be refined with a little wild garlic.
400 g durum wheat semolina
115 g whole egg
10 - 20 g dried wild garlic
Mix the semolina with the wild garlic and put it in a pasta machine. Now keep adding a little whole egg and keep mixing. Alternatively, you can knead the dough by hand and then roll it out, but we recommend using a pasta machine. Once everything is well mixed, the pasta is pressed into shape using the machine. The pasta only needs to be cut from time to time. The homemade pasta only needs about 3 minutes in boiling salted water until it is al dente and can be enjoyed.
You can add the leaves to your salad dressing, a tomato sauce or a little more to a cream sauce to create a delicious wild garlic sauce. A creamy wild garlic sauce tastes particularly delicious if you add a little wild garlic powder or serve it with wild garlic pasta.
Bread can also be flavored and lightly colored with wild garlic. Here too, you can combine the dried wild garlic with a little wild garlic powder to create a bread that is as aromatic as it is visually appealing.
Adding a little wild garlic to the marinade also gives fish and meat a light garlic flavor, but you won't be able to smell it long after eating. To do this, simply mix the herbs directly into the marinade and spread over the grilled or roasted piece.
