Description

Cedarwood oil

The cedar is not only a beautiful tree, it also has very special properties and aromas. Many dishes can be refined with the woody-sweet oil. The wood of the cedar is particularly aromatic and gives a great flavor to a wide variety of foods and drinks. The oil tastes woody to sweet.

Flavor explosion in the confectionery
Even if cedarwood oil is not seen that often, there are already chocolates with the sweet oil. But why buy it when you can make your own chocolate? The cedarwood oil can simply be added to the tempered chocolate coating. Make sure that you add no more than 1-2 drops to the couverture. Now stir the couverture well with a silicone spatula and taste it. If the aroma is not yet intense enough for you, you can add more.
You can also refine a delicious praline filling with the oil.
For a ganache with an earthy aroma, you need:
70 g full cream
10 g Glucose
5 g Sorbitol
5 g butter
1 drop cedarwood oil
140 g milk couverture
1 piping bag

Place the crushed couverture drops in a chrome steel bowl. Pour the cream, glucose, butter and sorbitol into a small pan. Bring everything to the boil, stirring constantly with a whisk. Pour the hot cream into the bowl with the prepared couverture pieces and leave the bowl to stand for 1 minute. Carefully stir the whole mixture with the whisk until it is uniform. Now add 1-2 drops of the oil to the ganache and stir everything again. Now take the piping bag and fill it with the ganache. Use a sealing clip to close the top of the piping bag so that nothing can flow out. Leave the ganache to cool in the room for 15 minutes. The ganache is enough for about 25 to 30 hollow bodies. This ganache goes well with Praline mold sheet 32 pralines or the Chocolate shells pine cones
