Pralines and chocolate bars with a delicious crunch are easy to make with nougat flakes. The flakes can be chopped and used in the filling, but they look much more elegant when used as decoration. In this way, chocolate bars and pralines can be refined into a real work of art and at the same time they become wonderfully crispy and taste deliciously of nougat.
To make delicious and crispy pralines, you will need cornet paper, a piping bag with a perforated nozzle, some solid chocolate ganache, some nougat flakes and couverture. Using the cornet paper, pipe small dots of chocolate onto baking paper and leave to cool. Then pour the thick ganache into a piping bag with a perforated nozzle and pipe it onto the dots. You can now stick one or more flakes on top. Either leave the chocolates as they are or dip them in tempered couverture again.
For a particularly crispy chocolate bar, mix your tempered couverture with some broken nougat flakes. You can then pour them into a chocolate bar mold or onto baking paper. After a few minutes in the fridge, you can unmold the chocolate and cut or break it into pieces as desired. If you would like to decorate the chocolate at the same time, place a few crunchy flakes in a specific shape as decoration or place a flake on each piece of chocolate.
