Agave syrup is the nectar of Agave mexicana, a cactus sacred to the Aztecs, which they offered as a sacrifice to the gods. Agave mexicana, better known as maguey, fulfilled a thousand needs of the Aztecs and was a true treasure for them. The fibers were used to make cloth, the leaves were ground into a paste and made into paper as white as papyrus, and the roots were eaten as well as the sap.
Agave syrup is obtained by pressing, filtering and heating the sap extracted from the leaves and heart of the cactus. Mayahuel was the Aztec goddess of maguey and fertility.
