The passion fruit used for this puree comes from Ecuador. This fruit puree passion fruit can be perfectly combined with raspberry, apricot, banana and mango. The fruits are harvested throughout the year.
The fruit puree should be thawed overnight in the refrigerator. One kilogram of fruit puree sounds like a lot at first, but it can be perfectly frozen in small quantities. Therefore, when thawing for the first time, we recommend immediately portioning the puree into smaller containers. Thaw the whole package until the puree can be easily squeezed out of the package. Depending on what you are using the puree for, you can portion the fruit puree in the quantities that you find useful. Be that 50, 100 or 200 grams. In these small containers, the puree will thaw faster the next time because of the smaller quantity. Fruit purees can easily be thawed and refrozen several times without negative results.
Due to the high proportion of fruit, this fruit puree is very versatile. Thus, it can be added as a flavor component to almost any mass. Nowadays, a praline can have a wide variety of flavors. For this you need:
100 g whole cream
120 g Fruit puree Your choice
10 g Sorbitol
20 g Glucose
20 g butter
280 g Couverture Your choice
Boil the cream together with the fruit puree, sorbitol, glucose and butter in a pot.
Pour the boiled mixture over the white couverture and press the drops down so that they are completely covered by the hot cream mixture. Let them stand briefly and then stir the melted chocolate until a homogeneous mass is formed.
Then fill the ganache into a piping bag and let it cool for about 20 min at room temperature. After the ganache has cooled, the ganache should have become a little firmer. If you notice that the piping bag is still a bit warm, you should let it cool down for another 5-10 minutes. If the ganache is still too hot, the hollow bodies could melt. Now fill your hollow bodies up to 2 mm below the surface. The 2 mm remain to seal the pralines with tempered chocolate coating. You can also fill the hollow bodies with additional freeze-dried fruit or brittle. The flavor combination is entirely up to your taste.
We store the fruit purees in the freezer until they are shipped or purchased on site. For orders, they are shipped well chilled, arrived they are then usually ready thawed. This way you can process or portion the puree right away. Unopened, the fruit puree can also be stored in the refrigerator for 1 year, opened you should consume it within 12 days or freeze it in portions, so you can keep it for a year.

The fruit puree is perfect for smoothies, fruit juices or cocktails. For smoothies or juices, you can gradually add the fruit puree to the blender and mix it with the other ingredients. For cocktails, add the puree to the cocktail shaker with the other ingredients and mix quickly. Finally, pour everything through a sieve into a cocktail glass. The fruit puree can also be added to a natural yogurt, such as Greek yogurt, and you have a delicious, natural fruit yogurt. Now add a little honey, oatmeal, nuts or fresh fruit pieces and you have a vitamin-rich breakfast. This fruit puree can flavor not only praline fillings, but also pie fillings. A nice side effect of the purees is also the coloring. So your cakes will not only taste extraordinary, but also look fabulous. To do this, add as much of the puree to buttercream, Swiss meringue, crème patisserie, or vanilla cream until you get the flavor you want. Of course, this applies not only to cake fillings, but also to patisserie, macarons and dessert variations. Fruit purees are also perfect for ice cream and sorbet. Here, the strawberry puree is added after the binder has been added. So that the ingredients mix perfectly with each other, everything is mixed again with a hand blender and left to stand for a day.

So you don't have to worry about whether you need more couverture for a ganache to make the mass thicker or whether your buttercream for the cake filling has the right hold.
