Strawberries give a deliciously fresh taste to a wide variety of creations, and freeze-drying makes them last longer and can be used for even more treats. The moisture is removed, but the high content of vitamin C, calcium, potassium, magnesium and biotin is retained. The taste is also not negatively affected, the aroma remains fresh and fruity. The fruits are natural, gently freeze-dried, there are no added sugars, flavors, dyes or flavor enhancers in it.
By removing the moisture, freeze-dried berries and fruits can also be used in combination with pure chocolate. While fresh fruit containing water would make the chocolate lumpy and inedible, these pieces can also be mixed into pure couverture and thus poured into delicious chocolate bars, for example. They can also be sprinkled directly onto the poured bar or freshly sealed chocolates, creating a beautiful and at the same time incredibly delicious decoration.
For delicious and fruity chocolates you will need some hollow praline balls or shells, a piping bag, some filling, for example a white ganache with the matching fruit puree, and couverture. Sprinkle a few pieces into each hollow ball or hollow shell, put the ganache in the piping bag and cut off the top. This allows the cream to be piped directly into the hollow spheres or shells. Finally, seal the chocolates with some tempered couverture and decorate or coat as desired with sprinkles, sprinkles or of course the freeze-dried pieces.
Freeze-dried fruits and berries are also perfect for cake fillings, sponge cakes or delicious creams. They can simply be mixed into the finished mass and processed further. For example, we like to use them as an ingredient in a light fruit quart cake, in a delicate fruit mousse or in a sponge cake. Finally, the small pieces can be sprinkled on as decoration, for example with a small dab of cream on a delicious blackberry éclair.
