Marc de Champagne must not be missing in the kitchen of a chocolatier, because it turns praline fillings into a melt-in-the-mouth, creamy delight. Even in small quantities, Marc de Champagne imparts a fresh champagne flavor and is thus perfectly suited for fine pralines as well as for fillings of éclairs, macarons or cakes.
With its 55 percent by volume, Marc de Champagne is not suitable for children, but for adults you create a very special treat. Since very little liquid is needed for an intense flavor, you can also refine chocolate ganache, butter cream or a cream filling.
For a delicious and long-lasting praline filling, add 70 g whole cream, 5 g sorbitol and 10 g glucose to a small pan. The glucose prevents crystallization in the finished mass and thus ensures an especially soft ganache that is free of lumps. Boil the mixture and pour it over 140 g couverturedrops. For the signature champagne truffles, a variety of chocolates are possible. Use either white or milk couverture, mix them or create two different masses. After a few seconds, you can start mixing the whole thing into a homogeneous mass. This is then covered with cling film to cool, after about 20 minutes pour 20 g of the Marc de Champagne and stir slowly and carefully. Then pour the ganache into a piping bag.
At a maximum of 27 °C, the filling can then be filled into hollow praline spheres. If you have two different colored ganaches, one is filled first, followed by the next after about 20 to 30 minutes. Then the hollow spheres are sealed with couverture and can be decorated as desired. For classic champagne truffles roll the sealed chocolates in a little powdered sugar.
For delicious buttercream for macarons, as a topping or for a cake, as well as for cream fillings and creams, add the Marc de Champagne slowly and in small quantities to the mixture and stir it in well. Then you can taste a little and add a little more according to taste.
