The Mirror Glaze is often used when the cake decoration has to go quickly. A single- or multi-colored as well as beautifully shiny coating gives your cakes that certain wow factor, but is an absolute eye-catcher despite its simple appearance.
In order for the Mirror-Glaze to have a smooth surface to mirror, the smooth surface of frozen mousse cakes is the best base for a Mirror-Glaze. Of course, cakes spread with ganache and buttercream can also serve as a base for the Mirror-Glaze. For this, the cakes must be very smooth and perfectly coated. It is important that the base must be frozen, so that the Mirrore Glaze can attract immediately, becomes beautifully smooth and receives an enchanting shine.
This ready-made Mirror Glaze just needs to be warmed before use and you are ready to frost your frozen mousse cakes or your ganache / buttercream spread cakes.
To do this, place the Mirror Glaze together with its container in a water bath and heat the glaze to 50 °C. In the meantime, remove your dessert from the freezer and place it on a wire rack.
Once the Mirror Glaze has reached the required temperature, remove it from the water bath and stir the glaze until it cools down to 45 °C. When stirring, be careful not to add air to the glaze, as this can cause air bubbles in the final result. Also, you can flow the Mirror Glaze through a sieve before applying it to avoid lumps or bubbles.
Now it must be done quickly. Once the glaze has cooled, it can be applied evenly to the prepared dessert.
It is important to pay attention to the melting temperatures and to use a thermometer during the production, because the gloss of the glaze depends to a great extent on the correct use of the product.
The glaze can be kept sealed and wrapped in cling film, in the refrigerator for up to a week and in the freezer for a few months.
You can also freeze your frosted cake and thaw it in the refrigerator at a later date.
