Cake icing gives cakes, cookies, cake pops and cupcakes a noble shine, without much effort. Unlike couverture, cake glaze only needs to be melted and not tempered to then solidify again and shine beautifully. The icing can also be melted several times without any problems and colored with the help of fat-soluble powder colors.
Data sheet
Cake icing is not only suitable for decorating cakes and pastries, it can also be used to coat and decorate cookies, cupcakes, cake pops and even chocolate kisses or éclairs. Such a coating can be made in no time at all, as the icing only needs to be melted and it is ready to use. The treats can also be chilled without any problems, as the surface does not crack. The extra-light cake icing can be colored as desired with fat-soluble powder paint. This gives all your treats the wonderful taste of white chocolate and an elegant sheen.
Start by making a treat of your choice. This can be a classic cake, a cake or a cupcake, but you can of course also frost another treat. For example, if you want to give your éclairs a sophisticated sheen, create unusual chocolate kisses or make colorful ice creams, Magic Cake Melts, as they are also known, are perfect. Because they are so easy to use, the Cake Melts are also great for a children's birthday party, where the children can decorate their own cake pops or cupcakes, for example.
Depending on the size of your treat, place a few cake icing drops in a bowl. It is better to use a little too much than too little, as the excess cake icing can simply be cooled and melted again later. Then place the bowl over a bain-marie or in the microwave. Let it run for a few seconds at a time and then stir again. You should also stir gently from time to time over the bain-marie so that the heat is optimally distributed.
If only a few small pieces are still visible, remove the bowl from the bain-marie or microwave and continue stirring until everything has dissolved. Now you can mix a very small amount of cake icing with fat-soluble powder coloring to prevent lumps from forming. Then add the intensely colored part to the rest of the icing and stir until the color is evenly distributed. The easiest way to frost a cake, bundt cake or cupcake is to place it on a rack on baking paper and pour the icing over it. This allows it to drip off nicely and the glaze that has set on the baking paper can be crumbled and reused.
Cake pops, biscuits, cupcakes, ice cream on a stick and eclairs can be dipped completely or halfway into the cake icing and dripped off a little or spread around the edges. Ice cream must be well frozen, the icing should not be too warm and you should always work quickly. It looks particularly great if you create a two-tone decoration. To do this, take a piece of cornet paper, roll it up and add a second color of icing. Alternatively, you can also use a piping bag. Use this to pipe thin stripes or small dots and patterns.
You can also stick other things onto the fresh cake icing, for example, add some sugar pearls, fondant decorations, gummy bears or Smarties. For a children's birthday cake, you can also place play figures on top to create a small themed cake. For a particularly elegant cake edge, a Cake Lace ribbon can be attached to the cake icing and if you want to make it crunchy, some almond or hazelnut brittle is suitable. After a short time, the cake icing sets, becomes firm and shines beautifully. It's that easy to decorate your treats!
