140 g Dark couverture
120 g liquid egg white
60 g ground almonds
20 g ground hazelnuts
50 g white flour
170 g granulated sugar
Preheat the oven to 160 °C.
2. Melt the butter together with the couverture over a water bath.
3. Put the egg whites, the melted butter and the melted couverture in a bowl and mix with a hand mixer or food processor until homogeneous.
4. Mix the ground almonds, hazelnuts, sugar and white flour together in a bowl and add to the whipped mixture. Mix until a homogeneous mass is formed.
5. Fill the finished mass into prepared cupcake cups and place in a Cupcake baking tray Bake at 160 °C convection oven for about 18 minutes. (filling weight per cupcake = 55 g)
The cupcakes can then be decorated and served as desired.
