Hazelnuts give a delicious nutty flavor to a wide variety of creations, caramelizing them makes them nice and crunchy and they taste delicious. The nuts are natural and caramelized only with water and sugar, there are no added sugars, flavorings, colorings or flavor enhancers.
Caramelized hazelnuts are perfect to be mixed into tempered couverture and thus poured into bars, due to their crunchiness and delicious caramel and roasted flavors. They can also be added directly to the poured tablet or halved from freshly sealed chocolates, creating a beautiful and at the same time incredibly delicious decoration.
For delicious and nutty chocolates, you will need some hollow praline balls or shells, a piping bag, a delicious ganache or nut filling and couverture. Sprinkle a few chopped pieces into each hollow ball or put a whole nut into a hollow shell, put the ganache into the piping bag and cut off the top. This allows the cream to be piped directly into the hollow spheres or shells. Finally, seal the chocolates with some tempered couverture and decorate or coat as desired with sprinkles, sprinkles or, of course, hazelnut brittle.
Caramelized nuts are also perfect for cake fillings, sponge cakes or delicious creams. They can simply be mixed into the finished mass and processed further. For example, we particularly like to use them as an ingredient in a caramel hazelnut cake or for a delicious crunchy base. Finally, the nuts can also be sprinkled on as decoration.
