Red salt is a salt that was traditionally used to preserve food. It is made from a mixture of purified seawater and red clay - called alae in Hawaiian - which is washed out and freed from its impurities.
This mixture is then placed in state-of-the-art evaporation ponds where the water slowly evaporates but the salt crystals remain intact. Alae is a clay that contains about 80 minerals, including a high concentration of iron, which gives it its extraordinary color. Its appearance, color and soft nutty flavor make it a fancy and original ingredient.
