The moulds can be used with any cupcake batter. Simply make the batter according to the recipe and pour directly into the paper cases. Pay attention to which recipe you are using. If it is a cupcake recipe, you can fill the molds to the brim. If it is a muffin recipe, the muffin will still rise a little. Therefore, do not fill the tin all the way to the top. Once the oven has heated up, you can place the filled cups in the oven and bake according to the recipe. Leave the cupcakes to cool before decorating them. The cupcakes are usually decorated with buttercream, but the range of decoration options is endless.
120 g butter
140 g dark couverture
120 g liquid egg white
60 g ground almonds
20 g ground hazelnuts
50 g white flour
170 g granulated sugar
1 Preheat the oven to 160 °C.
2 Melt the butter together with the couverture over a bain-marie.
3 Place the egg whites, melted butter and liquid couverture in a bowl and mix with a hand mixer or food processor to form a homogeneous mixture.
4 Mix the ground almonds, hazelnuts, sugar and white flour together in a bowl and add to the whipped mixture. Mix until the mixture is homogeneous.
5. pour the finished mixture into prepared cupcake cases and bake in a cupcake baking tray at 160 °C fan oven for about 18 minutes. (Filling weight per cupcake = 55 g)
The cupcakes can then be decorated and served as desired.
You can keep the delicious cakes at room temperature for 5 - 7 days or store them in the freezer for 3 months.
