How to use the pretty cookie cutters

The stainless steel cookie cutters are suitable for different types of dough. However, butter cookie or Milanese dough is best suited for this, as it is easy to work with. A simple shortbread dough is not only delicious, but also quick to make, does not stick and is easy to handle. You will need the following ingredients:

300 g flour

150 g powdered sugar

8 g vanilla sugar

1 egg

1 tsp baking powder

Zest of one untreated lemon

150 g butter

This is how it works:

Simply mix all the ingredients together and knead into a firm dough. You can also use a kneading machine for this. After kneading, place the dough in the fridge for about an hour so that it can firm up nicely. After the chilling time, knead the Güetzi dough again and then roll it out evenly thin using rolling pins. Make sure that your work surface, your hands, the rolling pin and the cookie cutters are mottled. This will prevent your dough from tearing during processing. Now you can start cutting out the cookies. To make Easter pointed cookies, make pretty holes in half of the Easter egg cookies using the mini cutters provided. Now place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 200 degrees Celsius until golden brown. 

After baking, the cookies are cooled on a wire rack. You can then finish them off with a filling of your choice. A raspberry jelly is just as suitable as a fruity lemon curd or a hazelnut or caramel filling. 

If you now want to decorate your cookies with colorful royal icing, take the royal icing mix. Prepare the mix as described on the packaging. So that the icing doesn't just stay white, you can color the icing with the ProGel colors. Divide the icing into as many different bowls as the colors you want. One dab of the ProGel colors is enough to achieve an intense color. You can now apply the royal icing to the cooled biscuits with a brush or a cornet. You can now add various sprinkles to the cookie. The cookie should now be placed in a dry place to dry for a while. This is probably the most difficult step for anyone with a sweet tooth!
