The automatic tempering unit is probably the ultimate when it comes to tempering couverture. Manual tempering is thus quite simply bypassed. A screw conveyor transports the chocolate to the spout. The built-in dosing device can be easily operated with a foot switch. So you can use both hands for the production of pralines, molds, bars or ice cream coatings.
The screw conveyor can also be used to transport other ingredients, such as freeze-dried fruit, cocoa nibs or nut pieces. These can therefore be added immediately to the tempered chocolate and do not have to be laboriously added individually to each creation.
The device is easy to clean, the screw conveyor can be easily removed from the device. So you do not have to worry about stuck remains or contaminated products.
The machine works automatically, as soon as the right program is set, the chocolate is tempered by itself. The tempering machine heats itself when the chocolate is too cold and cools via a self-sufficient cooling system. Within 10 minutes, 12 kg of couverture can thus be tempered.
The Selmi tempering machine also includes a 67 cm long vibrating table, which can be easily attached to the machine. This allows you to fill your chocolate figure molds with the foot-controlled dosing function and place them on the heated vibrating table, which removes the excess chocolate again.
The machine has a very space-saving design with dimensions of 38 cm x 74 cm x 147 cm. With the vibrating table, the machine is 67 cm wide. The machine can easily accommodate 12 kg of couverture.
Training on the use of the temperature control machine is included in the price, as is delivery within Switzerland and plug adaptation.
