With this pecan praline paste you create delicious pralines as well as flavored fillings for your treats. This praline paste is composed of equal parts of pecans and sugar. Praline masses are ideal bases for making delicate praline fillings. For this purpose, the mass can be mixed with couverture to taste and desired consistency. This pecan praline mass is composed of 50% pecans and 50% sugar. After adding tempered couverture, you get a delicious pecan gianduja or also known in Germany as nougat. You can vary the addition of couverture as you wish, depending on the desired consistency and the intended use. Larger or smaller addition of couverture will make your mass firmer or softer.
For delicious and quickly made chocolates you need some hollow praline balls or shells, a piping bag and some couverture. Then place the prepared pecan filling in the piping bag and cut off the tip. This allows you to pipe the cream directly into the hollow balls or shells. You can also mix the praline mixture with a little chocolate ganache in advance, this will create a less intense, creamy pecan ganache. Finally, seal the pralines with some tempered couverture and decorate or coat with sprinkle decor, sprinkles or coconut flakes as desired.
