With this mocha paste you create delicious chocolates and various fillings and treats. The mocha cream can be used directly and squirted purely into hollow praline balls or shells and spread on cakes or mixed with chocolate ganache or a cream filling.

Pralines, cakes and other desserts such as éclairs or macarons with a delicious coffee flavor are easily made with the ready mocha paste. The cream can be used pure or mixed with another cream or ganache. It can also be used to refine ice cream and toppings for cupcakes.
For delicious and quickly made chocolates, you will need some hollow praline balls or shells, a piping bag and some couverture. Then put the mocha paste into the piping bag and cut off the tip. This allows you to pipe the cream directly into the hollow spheres or shells. You can also mix the cream with a little chocolate ganache in advance, this will create a less intense, creamy mocha ganache. Finally, seal the chocolates with a little tempered couverture and decorate or coat with sprinkled decor, sprinkles or coconut flakes as desired.
If you would like to enhance your Éclairs, Macarons or a cake with a fine mocha aroma, add a little of the filling to your cream. For Éclairs, for example, a simple vanilla or chocolate mousse is suitable; for macarons, buttercream is a good choice. For a delicious cake filling, you can also make a vanilla cream or, for example, a yogurt or curd mixture and mix it with the lightly whipped mocha paste.
For a delicious mocha ice cream, make a simple basic ice cream mixture. You can use your own recipe or the basic mixture from our ice cream course. The mass is then mixed with a little mocha paste. This is how the mass is frozen, the ice cream will be especially delicious if you add some hazelnut or almond brittle just before the end of the freezing time.
This coffee filling that can be used immediately. A perfect ingredient in any chocolate creation, especially pralines. The filling can be used immediately without further processing. To do this, simply put a little in the dressing bag and fill into the praline shells and then close them nicely. As a decoration is suitable of course equal to a pistachio as a suitable decoration.
