A praline filling can be very diverse, there is the right variant for every taste. Some of the most common fillings are presented below.
Praline filling with nuts
One of the most common and beloved fillings for chocolates are nuts. These are ideally combined with nougat, marzipan or a chocolate variety. The pralines taste best if you prepare the nougat yourself. This is done in just a few steps and tastes much better than store-bought nougat paste. You either add the nuts in full size or chop them into small pieces. It's just a matter of taste, but any nut filling gives a praline that certain something. This sometimes surprising bite on a nut develops the full flavor on the palate. In addition, a good combination are marzipan chocolates with whole almonds.
Ganache praline filling
The term itself is not familiar to many and yet ganache is a very common filling for chocolates. It is also known as Parisian cream and is a mixture of chocolate and cream. The preparation of this is an art in itself and requires a certain amount of skill.
Praline filling with fruits
Both candied and pickled fruits are an excellent way to give any praline a fruity note. Raisins and cherries in particular have proven themselves, and taste simply fantastic in combination with chocolate. But it doesn't always have to be a fruit with texture, jam is just as ideal for refining pralines.
Chocolates with alcohol
If you look at the product ranges of well-known manufacturers of chocolates, alcohol is always a successful filling for chocolates. The chocolate industry recognized early on that the combination of chocolate and alcohol has a large following among praline lovers. If you make the chocolates yourself, it is important to make sure that you do not overdo it with the alcohol. It should not drown out the chocolate flavor in any case.
