You need a high-quality mold to make chocolate. With this chocolate mold made of food-safe plastic, you can easily make 2 pretty rocking horses.
The application is very easy! Before you touch the mold, you should put on gloves, otherwise your chocolate men could be covered in fingerprints. Chop up your chocolate coating if you have bought it in bars. Then melt a good two thirds of the couverture over a bain-marie on a low heat, stirring constantly, until it reaches a liquid consistency and a nice sheen. Then add the rest of the couverture and stir occasionally to dissolve. Make sure that no water gets into the couverture, as this will make the chocolate crumbly and lumpy. The melted mass is cooled and later reheated (called tempering).
The liquid chocolate mixture is then poured into the molds and most of it is poured out again to create a thin, beautiful layer of chocolate. Leave the chocolate to cool or put the mold in the fridge. Once you have cooled the chocolate figure halves, you can remove the chocolate from the mold. You can stick the halves together by either piping a little chocolate onto the edges using a piping bag or melting the sides in a warm pan. Again, make sure you wear gloves to avoid leaving fingerprints on your chocolate. Of course, you can also fill the halves with a delicious filling and enjoy them just as they are.
Chocolate couvertures are available in dark, white and milk, but chocolate comes in the most colorful varieties! With cocoa butter paint, you can color your chocolate men in your favorite color. Do you want to keep the natural chocolate color and just add a shimmer to your Santas? Then the powder paints for brushing onto the chocolate are just right. These are also available in different colors and effects. As the diamond look is already a visual highlight, we recommend that you either color the chocolate or enhance the diamond theme with silver powder paint. There are no limits to your creativity.
How to clean your praline mold
It is best to clean your mold by hand with warm water and a little washing-up liquid. We do not recommend using the dishwasher as the material can warp. If the mold is to be used again straight away, you should dry your mold well and remove any water stains. This will prevent the quality of the couverture from deteriorating.
