How does a chocolate mold work?
A chocolate mold consists of two halves and is usually made of hard plastic or metal. The care of the mold is particularly important: any scratch or residue is visible in the chocolate mold. For this reason, special care must be taken when removing chocolate residue. Gentle cleaning by hand with gentle, lye-free cleaning agents is recommended. Although the molds are usually also dishwasher-safe, cleaning agents with shine rinsing agents can leave behind a greasy film. This spreads irregularly in the mold and can also lead to irregularities in the chocolate surface. To give the chocolate a nice shine, the mold should be carefully rubbed out with absorbent cotton after cleaning.
Tips & tricks for the perfect chocolate figure
In order for the chocolate to release from the mold easily and without damage, the mold should be cooled before the pouring process. As soon as the tempered chocolate is poured into the mold, it contracts due to the cold and is easier to release later. To give the chocolate a nice shine, the mold should be rubbed with absorbent cotton after cleaning. The secret to an even, crack-free chocolate figure lies in the couverture. If this is to be tempered correctly, only then it has a strong gloss and is easy to mold
