Flour is one of the simplest ingredients of pastries and treats of all kinds - and for this very reason the most important! Each flour has different properties and flavors, only with the right flour the creation really succeeds. Not only the type of grain and the degree of milling, but also the quality and the place of origin have a great influence on the final product. The flour from Altbachmühle comes from Switzerland, is of excellent quality and is processed gently.
White flour consists of wheat grains that are ground and sifted. The outer parts of the grain are removed, so that the flour becomes particularly fine. This makes it ideal for pastries of all kinds.
Sponge cakes, shortbread doughs, most Guetzli and pastry doughs are made with white flour because it has optimal baking properties. The gluten in the dough makes it nicely stretchy and holds together. Fine pastries are therefore easier to make with wheat flour than with rye flour, for example.
If you want to make particularly fine baked goods, we recommend sifting the flour in advance. Nothing is sifted out and removed, but small lumps are loosened and the flour is easier to spread afterwards.
