This dough machine ensures perfect doughs of all kinds - just like the bakery itself. Thanks to the two speeds, you can first mix your dough slowly and then finish kneading it a little faster. The hook and the bowl rotate in opposite directions at different speeds, allowing you to achieve a particularly even result. To avoid kneading the dough too short or too long, you can also set a timer on the machine and use the enclosed instructions to determine the perfect kneading time for each dough. The food processor can also be used for soft doughs, fillings or for whipping full cream and egg whites using the mixing paddle or the whisk with whisk insert.


The maximum amount of dough depends on how firm the dough is. This is indicated by TA (dough yield). TA 160 means, for example, that 600 ml of water is added to 1 kg of flour. If, for example, only 400 ml of water is added to 1 kg of flour, this is TA 140 and the dough is slightly firmer. The lower the TA, the firmer the dough will be. Accordingly, less dough can be kneaded at once with the machine. The following dough quantities apply:


less than TA 160: 0.5 - 2.25 kg dough

more than TA 160: 0.5 - 5 kg dough


Professional dough machine Alpha 2G - Application

The Alpha 2G is a stable and durable professional-quality kneading machine, which nevertheless fits perfectly into the kitchen of amateur bakers and private households. Of course, the machine also comes with detailed instructions that not only show you how to use it, but also provide tips on kneading times for different doughs.

For a simple bread dough, remove the stainless steel bowl from the machine with a quick turn to the right. Add all the ingredients such as flour, liquid, yeast and other ingredients. The bowl can hold up to 5 kg of bread dough. The bowl is replaced with a turning movement to the left. Then attach the dough hook to the head of the machine. Now press it down gently and push the handle all the way in. Finally, fold the splash guard down, otherwise the machine cannot be switched on. This is also a safety feature, as it prevents hair, clothes or even your hand from getting caught in the mixer.

You can now start the machine in first gear or set a time. Use the instructions to find the perfect kneading time for your dough. Then press the time button and set the desired number of minutes. If the dough seems ready or the time has elapsed, you can set a new time and switch to second speed. This will finish kneading the dough until it passes the window test.

Switch off the machine, fold the splash guard and the machine head upwards and clean the dough hook if necessary. If necessary, you can also leave the dough in the bowl to proof. The hook and the stainless steel bowl are dishwasher-safe and can therefore be cleaned very easily.

You can also buy the mixing paddle and the whisk with whisk insert to make softer doughs or even beat eggs until frothy. The mixing paddle has a rubber lip that pulls the entire mixture along the edge, making it suitable for low doughs. You can use the mixing paddle to make sponge doughs, late dough, swelling and scalded pieces, creams or even shortcrust pastry. The bowl insert of the whisk prevents egg whites, full cream or very creamy, soft doughs from being beaten unevenly or not being caught by the whisk. This allows you to whisk both small and large quantities of soft dough and achieve a wonderfully airy result.

Of course, the Alpha 2G also needs to be maintained from time to time. To do this, you need a suitable grease for the gears of the agitator, the mixing elements, the bowl and the driver. We recommend the adhesive grease for dough machines and the food-safe grease for dough machines.

With this machine, you can knead hundreds of doughs for delicious breads, pastries, cakes and much more over the years. As it is professional quality, the appliance is a little more expensive, but guarantees optimum processing and countless hours of enjoyment in the kitchen.
