House of Marie is a company from the Netherlands. In addition to cupcake pipettes and transport boxes, they also offer various sizes, colours and shapes of cupcake cases. These are made from high-quality and grease-free paper. All paper products come from responsible production in Western Europe.

Cupcake cases and boxes are available from many different manufacturers, but pipettes are less well known in the baking industry. But they can be used cleverly and are also part of the decoration. Serve up these treats for a deliciously moist surprise!

Juicy Chriesi Chocolate Cupcakes

60 g butter

70 g dark couverture

60 g egg white

30 g ground almonds

10 g ground hazelnuts

25 g white flour

85 g sugar

Melt the butter together with the couverture over a water bath. The bowl with the couverture and butter should not touch the water in the pan and should only be heated by the steam. Together with the egg white, whisk the melted ingredients a little until a homogeneous mass is formed. Then mix the remaining ingredients briefly and stir into the mass. If necessary, you can now mix in some dried or fresh chopped cherries or sour cherries. However, they should be well drained, otherwise the batter will be more liquid.

Now divide the batter between 12 cupcake cases. The muffins keep their shape best if they are baked in a cupcake baking tray. They are ready after about 18 minutes at 160 degrees. They can cool on a cooling rack. Meanwhile, you can prepare a delicious topping, for example.

Different creams go well with these muffins. If you are a real chocaholic, you can make a solid chocolate ganache. However, this will make the cupcakes rather heavy. A lighter version is made with a cream cheese and chocolate mixture. A firm vanilla cream or a sweet butter cream also go well with the little chocolate and cherry cupcakes. If you and your guests are fans of the classic Black Forest cake, whipped cream is also perfectly adequate! To make it firm and easy to spread, we recommend adding a little cream stiffener.

Fill the mixture of your choice into a piping bag with a star or rosette nozzle. Depending on the heaviness of the mixture, you can either pipe a flat curl or a small tower.

Now provide the juicy centre. Prepare some cherry or sour cherry fruit puree and some cupcake pipettes. The best way to fill the pipettes is to use a syringe with a needle. The needle is put on, dipped into the liquid. This is how the syringe is drawn up, then the liquid can be filled directly into the upper part of the pipette. This way, no smaller droplets remain in the tube, as is sometimes the case when squeezing, dipping and releasing.

The pipettes are then inserted into the cupcake at a slight angle through the squiggle without applying pressure. This keeps the liquid in the pipette for the time being. Finally, a fresh or pickled sour cherry, a fresh or candied cherry or a small fondant flower can be placed on the topping as desired.

Now the perfect cupcakes are ready! Delicate chocolate cupcake with fresh fruit pieces, sweet topping and bright red fruit puree. This is how they are served or placed on the buffet. Before eating, the pipette is then squeezed so that the liquid is distributed inside the muffin and ensures a juicy centre.

Besides juicy cherry muffins, there are of course countless other delicious creations. Some delicacies can be baked with fruit purees. For example, try almond muffins with apricot fruit puree or nut muffins with wild berry puree. A classic in a new guise is lemon muffins with a lemon-sugar syrup. With all fruit purees, you should try a little first and add a little sugar if necessary.

Of course, the cupcakes can also be transported ready decorated. To prevent them from falling over or bumping into each other and damaging the decoration, a cupcake box is used. This not only looks great, it also has an insert especially for muffins and cupcakes. Each cupcake is placed in one of the holes and can therefore no longer slip.
