In our course you will make this delicious pastry as a mini patisserie and in the end you will go home with about 20 self-made mini ear heads in various flavors.

The Patisserie Mohrenkopf, which is very popular in confectionery, is a ball made of sponge cake dough, which is filled with vanilla cream and covered with chocolate, mocha or coloured melting fondant. Please note that the Patisserie Mohrenkopf (also called chocolate ball) is not to be confused with the Schaumkuss or Schokokuss, which is filled with an airy egg white snow.
In this patisserie course you will make this delicious pastry as a mini patisserie. From the classic, which is filled with a vanilla cream and covered with chocolate fondant, to the popular mocha beans or the more elaborate hearts, which are filled with raspberry cream. There are so many different flavours, so there's bound to be something for everyone.
In the Mohrenkopf Patisserie course, we first start by making the vanilla cream. Everyone makes their own cream, which is later refined with different flavours. Then comes the more difficult part of the course, namely the production of the sponge and the subsequent moulding in different shapes.
After baking, you will fill the mini-patisserie with different creams, glue them together, then glaze them and later cover them with different types of fondant. You will learn to which temperature the fondant should be heated and how to cover the patisserie with the self-heated fondant and how to decorate it creatively later.
At the end of the course, each participant goes home with about 20 different mini patisserie carrot heads. The carrot heads taste best on the day they are made, but can still be enjoyed a day or two later without any problems. Please note, however, that the icing may then dissolve somewhat.

The course is suitable for adults and young people from the age of 12. A maximum of 12 people per course can take part, as individual attention is very important to us.
Water, coffee & tea are available before and during the course. (You are welcome to bring sandwiches or anything else to eat).
At the end of the course, you can take home your self-made mini patisserie carrot heads (approx. 20 pieces) beautifully packaged. You will also receive a detailed recipe booklet with step-by-step pictures and recipes.
All course participants will receive a course diploma by e-mail after the course.

In our patisserie course you will learn how to make vanilla cream, how to make the special sponge cake for Moor's heads and how to finish the traditional pastry. Thanks to our detailed recipe booklet, it should be no problem for you to bake the products at home later on.
