Creamy wild garlic soup

The variety of dishes that can be created from wild garlic shows just how versatile this wild vegetable is. One example of this is the wild garlic soup we have cooked here. Combined with potatoes, it is a delicious, creamy soup that gives you a taste for wild garlic. The soup can be eaten as a starter or served as a main course. Eating warm soup is the perfect contrast programme, especially when it gets a little uncomfortable and rainy in spring. Quick to make, it is the perfect meal, why not give it a try!

Ingredients

Wild garlic170 g
1 large onionapprox. 50 g
3-4 potatoes (floury)approx. 250 g
Butter30 g
White wine1 dl
Vegetable stock6.5 dl
Cream2 dl
A little salt, pepper and chilli powder

This is how it works:

First wash the wild garlic thoroughly. Then peel and chop the onions.

Next, put some butter in a pan and let it melt. Then add the onions and wild garlic and sauté in the pan. Meanwhile, you can peel the potatoes and cut them into small cubes.

Then deglaze the sautéed wild garlic and onion with a little white wine and add the vegetable stock and diced potatoes to the pan. Leave to simmer for approx. 20 minutes, or until the potatoes are cooked and floury. Now you can puree the mixture in the pan with a hand blender or blender. To make the soup nice and creamy, add the cream.

Finally, you can season your soup to taste with a little salt and pepper and chilli powder. Your delicious wild garlic soup is ready.

Wild garlic is a highly valued and versatile plant. It is very healthy, has a detoxifying effect and is even said to help with spring fatigue and many other ailments. Wild garlic can be found in moist, humus-rich deciduous forests and is harvested between March and May. It can be recognised by its soft, elongated stem, which grows from a slender bulb, and its shiny, lanceolate leaves. But beware of confusion! The lily of the valley and the autumn crocus look very similar to wild garlic, but are extremely poisonous! It is therefore very important to pay attention to small details, a good distinguishing feature here is the garlic odour, which is only present in wild garlic. But if you pay attention to everything, wild garlic is an absolute enrichment for the kitchen!
