Vanilla pretzels - a quick recipe for you

Vanilla pretzels are as much a part of Christmas as Spitzbuben, Mailänderli and cinnamon stars. In other words, it's hard to imagine Christmas without them. The fine, vanilla-scented butter biscuits are a real treat. It is not without reason that it is said that the pleasure lies in simplicity (well, basically it's called strength - but you can put a twist on a few proverbs). The tender, still-warm vanilla pretzels are coated with a fine icing sugar glaze immediately after baking. This gives the biscuits their final touch. What are you waiting for? Vanilla pretzel dough

Butter | soft180 g
Granulated sugar 160 g
Whole egg | egg beaten80 g
Vanilla seeds4 pinches
White flour380 g

Glaze

Icing sugar600 g
Water100 g

Making the vanilla pretzels

Place the softened butter and granulated sugar in a bowl and beat with a hand mixer until fluffy. You can of course also use a food processor. Once the mixture is nice and fluffy, you can add the whole egg (beaten egg) and mix in well.

Then add the vanilla seeds and white flour and briefly stir in the dry ingredients. Now transfer the slightly crumbly dough to your work surface and knead into a smooth dough. Wrap it in cling film and place it in the fridge for about an hour.

Cutting out the biscuits

Preheat the oven to 170 ºC fan oven.

Take the dough out of the fridge. Now knead it again briefly to make it a little smoother. Now flour the work surface generously and roll out the dough to a thickness of 5 mm using rolling pins. Using a practical pretzel cutter with an ejector, you can now cut out the individual biscuits and place them on a baking tray lined with baking paper. Bake the biscuits for 10 to 15 minutes in a fan oven preheated to 170 ºC.

Finishing the pastry

You only need to leave the baked vanilla pretzels to cool briefly. In the meantime, you can mix the icing sugar and water in a bowl. You should have a thin glaze. As soon as you can evenly coat the back of a spoon with it, the icing has the perfect consistency. You shouldn't need more than 1-2 minutes to mix the icing, as the vanilla pretzels need to be coated while still very warm, otherwise they will lose their lustre. You can also prepare the icing sugar glaze in advance. Dip the warm biscuits upside down in the icing and then place them on a rack so that the excess icing can drip off. It is best to place baking paper under the rack.

Storage & shelf life

You can easily store the biscuits for up to a month. Ideally at room temperature in a biscuit box.
