The perfect nut corners

Nut corners - quick, delicious recipe

Nut corners are delicious, easy to make and quick to prepare. Traditionally, they are made with sliced hazelnuts, but you can also use almonds, pecans or any other nuts of your choice. The nut corners consist of a fine sugar dough, which is spread with a thin layer of raspberry jam and then topped with a fine hazelnut macaroon mixture. The crispy yet soft nut corners are then dipped in tempered couverture for the crowning touch. It is entirely up to you how you dip the corners. Whether both corners, all three or even half? Or just fill them with a little couverture?

Sugar dough

Butter | cold75 g
Granulated sugar125 g
White flour200 g
Whole egg | beaten egg50 g
Vanilla seeds2 pinches

Filling

Granulated sugar300 g
Hazelnut | sliced200 g
Egg white150 g
Raspberry jam170 g

Making the sugar dough

Place all the ingredients except the whole egg in a bowl and rub the ingredients between your hands. As soon as the lumps of butter have disappeared, you can add the whole egg and work it into the dough. Knead the dough on your work surface to form a smooth dough, wrap it in cling film and place it in the fridge for at least 30 minutes.

Preheat the oven to 180 ºC fan oven.

After the chilling time, knead the dough briefly and then roll it out on a lightly floured work surface to a thickness of 4 to 5 mm using rolling pins. Place the dough on a baking tray lined with baking paper. Then take a square cake ring (26x26 cm) and use it to cut out the dough. Leave the baking frame directly on top. Prick the pastry with a fork and bake in a preheated oven at 180 ºC for 5 to 10 minutes.

Making the hazelnut paste and baking

Take the pre-baked dough out of the oven, turn it up to 200 ºC fan and allow the dough to cool slightly. Place the chopped hazelnuts, sugar and egg whites in a pan and toast the mixture over a medium heat, stirring constantly. Do not turn the heat up too high, otherwise you will end up with solidified egg whites. As soon as the mixture thickens a little, it is ready. If you can't find sliced hazelnuts, you can simply chop them coarsely.

Now spread the raspberry jam over the slightly cooled shortcrust pastry base. This is best done with a small angled palette knife.

Now pour the roasted hazelnut mixture onto the pastry sheet coated with jam and spread evenly. Place the creation in a preheated oven at 200 ºC for 15 to 20 minutes.

Completion of the nut corners

Run a straight knife along the edge of the cake ring to loosen the mixture from the baking tin. Then cut it into three long strips (approx. 8.5 cm wide) and then each of these strips into 3 squares. Finally, cut them in half diagonally to create the typical nut corner shape.

Now dip the corners of your nut corners in tempered dark couverture and then place them on a baking tray so that they can cool down. You can also use milk couverture or white couverture if you prefer this combination. If you don't want to temper, you can also use cake icing.

Storage & shelf life

The nut corners will keep for up to a week in a biscuit box. Wrapped in cling film, you can freeze the nut corners for up to 2 months.
