Sophisticated ice cream packs

Summertime is ice cream time - without question! Everyone loves ice cream or sorbet because they come in all kinds of flavours, there is something for everyone and there are actually endless possible combinations of flavours, fruits and spices. Ice cream also ensures that we survive these hot summer days and stay in a good mood. We've made a little video especially for you that you can use to spice up your ice cream and make it even more eye-catching. It will amaze your guests in particular! You can prepare the dessert really easily and all you need is your favourite ice cream, melted couverture and an ice-cold marble slab. For additional decoration, we recommend a few fresh fruits and possibly one or two fruit jellies, but that's entirely up to you. Have fun recreating it!

Ice cream packs

Ingredients:

400 g white couverture

400 g milk couverture

400 g dark couverture

Decoration:

Fresh fruit

Peppermint

Fruit jelly

Glitter spray

This is how it works:

  • The most important thing is that you use a marble slab and place it in the freezer for at least 3 hours before making the parcels! If you don't have a marble slab at home, you can of course order one from us or use a cake slab. The only problem with the cake slab is that it doesn't retain the cold for nearly as long as the marble slab, so you'll have to put it back in the freezer after making 1-2 packets.

  • With the marble slab, on the other hand, you can make 6-8 packets at once, depending on the speed.

  • Once the 3 hours cooling time has been reached, you can melt the couverture and take the tray out of the freezer as soon as it is liquid.

  • Simply heat the couverture to 45 °Cusing a tempering device or over a water bath; it does not need to be tempered in this case.

    Of course, you don't need the full amount of couverture, for one packet you only need about one ladleful of couverture and after cutting the packets to size, one packet will only weigh about 20 g. Nevertheless, you must bear in mind that you will need a certain amount of couverture to be able to spread it well.

  • As soon as your couverture is liquid, you can now place the marble slab on your work surface, shape your desired ice cream into balls and place them on a separate plate about 8 cm apart.   • Now take a ladleful of couverture, pour it onto your marble slab and smooth it out with a straight spatula.

  • As soon as you notice that the couverture is setting, you can start cutting it. Preferably to a rectangle.

  • Simply remove the cut couverture from the plate and add it back to the rest of the couverture. You will also notice whether the couverture has the right consistency for further processing. It should be neither too firm nor too soft.

  • Now detach your cut rectangle from the plate, place it around your ice cream ball and press the top end together with four fingers to form a packet.

  • Simply repeat this process as often as you like, or until the tray has to go back into the freezer.

  • If you want to use different couvertures, it is best to start with white, then milk and finally dark, so that you don't have to clean the tray or only have to clean it slightly.

  • The remaining couverture can easily be melted down again and used for other creations. If you allow the couverture to harden, you should temper it beforehand to avoid unsightly streaks or grey haze, you can find out how to do this HERE.

Decoration

When it comes to decorating, you are actually completely free to do as you please - after all, everyone has their own style and perhaps even their own personal motif. Nevertheless, we will show you a pretty variation on how you can arrange the parcel beautifully.

All you need is some fresh fruit - blueberries, strawberries, raspberries, redcurrants, peaches, mango and physalis are best. But of course you can use any fruit that suits your taste.

We also added some glitter spray to the packets and painted a pretty pattern on the plate with fruit jelly. To do this, simply pour the jelly into a small plastic bottle with a dosing function.

Now draw the desired pattern on the plate, place the packet next to the jelly and add some fresh fruit and peppermint leaves for colour. Finish with some glitter and et voilà: The perfect summer dessert!
