Cookie dough ingredients

Making the cookie dough

Melt the butter in a small pan. The butter does not need to be hot, just liquid. Then pour it into a bowl. Add the icing sugar and vanilla seeds and stir the mixture with a hand mixer.

In a separate bowl, mix the whole egg with the milk and add the mixture in sips to the icing sugar mix. Finally, sift in the flour and mix well again until you have a smooth batter. At this point, you can also mix in flavourings, gel colours or ingredients such as cocoa nibs or freeze-dried fruit. This allows you to individually flavour waffles and adapt them to your personal taste.

Preheat your waffle iron to 180 °C. As soon as the temperature is reached, place a tablespoon of the waffle mixture in the centre of the iron and close. Leave the waffle to bake for 1 1/2 to 2 minutes. Then loosen the baked batter from the hot iron with a spatula and turn it into a nice waffle cone using a cornet turner. Make sure that your base is nice and straight and that you work really quickly when rolling it up. Under no circumstances should you allow the dough to cool, otherwise it will become brittle.

Storage & shelf life

The finished ice cream wafers can be stored in a dry place for up to a month if sealed airtight. So you can also make them well in advance.
