Homemade iced tea

Summer is finally here! The days are getting hotter and hotter, so a refreshing cool-down is just what we need. Especially in warm weather, it's important to drink plenty of fluids and have a tasty, refreshing drink. That's why we've created a delicious iced tea recipe for you here. Once you have made the syrup, which is quick and easy to make, you can sip your iced tea at any time. All you have to do is pour 1-2 cm, or more depending on how intense you want the flavour to be, of the homemade syrup into the glass and top up with cold water and ice cubes and your iced tea is ready! Of course, you can also add some mint and lemon slices to further intensify the flavour and give your iced tea a fresh, summery look. Have fun trying it out!

Ingredients

Water (part 1)500 g
Ceylon black tea20 g
Water (part 2)250 g
Peppermint herbs8 g
Lime blossom3 g
Cloves4
Organic lemons | juice and zest2
Honey75 g
Cane sugar250 g

This is how it works:

Bring the water (part 1) to the boil in a large pan. When the water is boiling, switch off the hob, add the Ceylon black tea, cover and leave to infuse for 5 minutes. For a more intense black tea flavour, you can of course leave the tea to infuse for longer, but the longer the tea infuses, the more bitter it becomes. Now pour the tea through a sieve into a large container such as a bowl or similar. Then boil the second part of the water in a new pot. As soon as the water boils, you can turn off the hob and add the fresh or dried peppermint herbs, lime blossom, cloves and lemon peel.

It is best to peel the lemon with a peeler to obtain larger pieces; the lemon juice will only be needed later. Leave the whole thing to stand for 5-10 minutes. Then tip this through a sieve and mix with the black tea. Mix the honey and cane sugar together in a bowl, add the hot tea mixture and lemon juice and stir. If the tea is no longer hot enough to melt the sugar crystals, you can heat it up again until the sugar has dissolved. Then tip the mixture through a fine sieve again, pour it into a litre bottle and chill it. You have now made an intensely flavoured syrup. For a delicious iced tea, you only need to pour 1-2 cm of it into a glass and then top up with cold water and ice cubes. The syrup is sufficient for approx. 20-30 portions. The syrup can be kept in the fridge for up to 2 weeks.

If you want a red iced tea, you can simply replace the black tea with dried hibiscus flowers. These give the tea an intense red colour and also add a great flavour!

    Liebes miniSchoggi Team
    Andreas
