Halloween donut recipe: Apple and cinnamon filling

Donuts are popular all over the world and almost everyone loves them. But unfortunately, the little dough rings are not exactly the lowest-calorie pastry there is. We have developed a super delicious baked version for you that tastes just as good as a deep-fried donut, but has significantly fewer calories. Well, to be honest, desserts are all about indulgence and you really shouldn't count calories, but as we still need to save a few kilos before we fill our bellies again at Christmas, we thought that a light donut version wouldn't be so bad. This donut is filled with a delicious apple and cinnamon filling to get us in the mood for winter and is decorated with a cool and spooky glaze. The airy, soft yeast dough and the heavenly apple filling really do harmonise perfectly. So, what are you waiting for? Put on your apron and get into the kitchen!

Apple and cinnamon filling

Making the donut dough

Gently heat the milk in a small pan. Pour the sugar into a large bowl with the warmed milk and add the yeast. Now add the egg yolk and the soft butter and mix everything briefly with a whisk to dissolve the butter.

Once the butter has dissolved, you can now add the flour and a pinch of salt and fold in with a rubber scraper. Once you have a firmer dough, you need to place it on a floured work surface and knead well for several minutes. Of course, you can also use a dough machine for this.

To make sure that the dough has the right consistency, you can take a small piece of the dough and carefully pull it apart. If you can see through it without the dough tearing, then it has the right consistency. This is called the window test. Once the dough is ready, put it back in the bowl, cover and leave to rise at room temperature for 40-60 minutes.

Making the apple and cinnamon filling

Remove the core and cut the apples into small, fine cubes. Place the chopped apples in a pan with the butter, cinnamon and water. Bring everything to the boil briefly and then simmer gently over a medium heat for 10-15 minutes. As soon as the apples have softened, you can fill the filling into a piping bag and put it in the fridge to cool for approx. 10-15 minutes.

Filling and baking the donuts

Preheat the oven to 180 ºC fan oven.

As soon as your dough has risen properly, you can transfer it to a floured work surface. Sprinkle some more flour on top of the dough and roll it out over a large area. You should end up with a final size of 48 x 32 cm. Now cut the dough in half lengthways so that you have two rectangles of dough measuring 48 x 16 cm. Cut out smaller rectangles measuring 8 x 16 cm from each of the two dough sheets. It is best to use a metal ruler for all the steps.

Now take your cooled apple filling out of the fridge, cut off the tip of the piping bag and place a strip of filling in the centre of each rectangle of dough. Now brush the edges with whisked whole egg so that you can seal the donuts well.

Fold both edges together towards the centre over the filling and press the overlapping dough together well. Shape the dough into a circle and press the two ends of the dough together well. Place the finished donut in the greased donut tin and bake in a preheated oven at 180 °C for 12-15 minutes.

Egg white glaze

Mix the egg white with the icing sugar until you have a smooth, thick icing. Now divide the icing evenly between 3 bowls and add food colouring (ProGel) of your choice.

Carefully remove the donuts from the baking tin, take one in your hand and dip it upside down in the egg white glaze. Turn the doughnut slightly in the glaze so that it can coat the dough evenly and then place it on a baking rack or cake rack. Be sure to place baking paper under the cake rack, as the glaze will drip down a little before it sets completely.

Decorate the donuts with edible sugar eyes, edible paper and sprinkles.

You can of course also decorate the donuts with the remaining icing. However, we recommend that you add 1-2 teaspoons of icing sugar to the icing to make it a little thicker. Pour the royal icing into a cornet or small piping bag and decorate the donut with dots, stripes, a spider's web or anything else you can think of. Of course, you are completely free to decorate your donuts however you like!

Storage & shelf life

The finished donuts can be kept for 2-3 days at room temperature. It is best to store them in an airtight container. After 3 days, they will simply be very dry, which is why we recommend that you enjoy the delicious donuts as fresh as possible!

Donuts - where do they come from?

Donuts - these delicious, round pastries are hugely popular all over the world. But where do these sweet treats actually come from?

The origin of the donut lies in North America, more precisely in the United States. Various stories and legends surround the invention of this tantalising delicacy. One of these stories says that the doughnut was invented by Dutch settlers in the 19th century. They are said to have had the idea of wrapping dough around a walnut or hazelnut and then deep-frying it. This simple method led to the creation of today's doughnut shape.
Making doughnuts is time-consuming, but the effort is definitely worth it. First, a special yeast dough is made, which needs time to rise. The dough is then moulded into small balls and fried in hot fat. The heat of the fat ensures that the donuts get a golden-brown, crispy crust. Once baked, the donuts can be decorated as desired - with chocolate, icing or colourful sprinkles. There are endless variations and flavours that make donuts a real treat.
Whether traditional donuts with icing or modern creations such as donuts with Nutella filling - these round treats make us melt. The smell of freshly baked donuts is simply irresistible and immediately makes you want to bite into this sweet pastry. It's no wonder that donuts have a huge fan base worldwide. So let's treat ourselves to a donut every now and then and savour this momentary heaven in our mouths. And since we've developed a non-fried version, it's even easier to reconcile a donut a day (or two or three) with your conscience!
