Cucumber rolls - a light snack

Ingredients

Cucumber1
Figs | dried60 g
Cider crumbs50 g
Smoked almonds50 g
Dill1/2 sprig
Cream cheese200 g
Olive oil1 TBSP OLIVE OIL

Making the cucumber rolls

  • Cut the cucumber into wide strips using a grater or vegetable slicer.

  • Put the dried figs, cider crumbs, smoked almonds and dill into the blender and chop briefly. The mixture should still have coarse pieces, so do not blend for too long. Mix with the cream cheese, olive oil, salt and pepper.

  • Pour the cream cheese mixture into a piping bag and cut off the syringe to create a slightly larger hole. Pipe a little (approx. 1 tablespoon) of the mixture onto the short side of the cucumber strip. Then roll up the cucumber strip tightly and pierce with a toothpick. Garnish with a little dill.
