Christmas is just around the corner and that means it's time to get back in the kitchen and bake some delicious Christmas biscuits. Among the many traditional biscuit recipes that we all love, there is a very special one, the cinnamon star recipe. These delicious little stars are not only visually appealing, but also offer an irresistible flavour that is perfect for Christmas.
Cinnamon stars are a popular delicacy at Christmas time. Their sweet and cinnamony flavour immediately reminds us of the festive season and gives us that warm feeling of cosiness and tradition. What makes this recipe so special is the fact that it's easy to make and doesn't require any complicated ingredients.
All you need for this cinnamon star recipe are the basics that you probably already have in your kitchen: Almonds, icing sugar, egg white, cinnamon and lemon juice. The preparation is also simple and only requires a few steps to mix the dough, roll it out and shape the perfect stars using a special cinnamon star cutter. Thanks to the practical cutter, you also save yourself the trouble of having to coat the stars with the icing several times individually.
The aroma created when baking these cinnamon stars is simply irresistible. It fills the house with a wonderful aroma of cinnamon and makes us feel the anticipation of Christmas even more.

Cinnamon star pastry

Almonds | ground160 g

Making the cinnamon stars

Place all the ingredients for the dough in a bowl and mix until a coarse dough forms. Then place this on your work surface and knead the mixture into a compact, slightly sticky dough, wrap it in cling film and place it in the fridge for approx. 1 hour.

Preheat the oven to 210 ºC top and bottom heat.

After the cooling time, transfer the dough to your lightly sugared (granulated sugar) work surface and roll out to a thickness of 8 mm (3 mm + 5 mm) using rolling pins.

Now beat the icing sugar together with the egg white and lemon juice until you have a thick icing. You can recognise the perfect consistency by the fact that you can draw a pattern on the surface with the icing, which does not disappear again immediately.

Now carefully spread the icing onto the rolled-out cookie dough with a small angled spatula and then try to smooth the surface as best you can with a large spatula.

Dip the cinnamon star cutter in a bowl of water, allow it to drain briefly and then press the cutter together very well. Start cutting out the individual stars at the edge of the dough.

Then place the cut-out cinnamon star on a baking tray lined with baking paper. The biscuits will come out of the cutter by themselves as soon as you open it. Repeat these steps until the entire surface of the dough has been used up.

Now use a small angled spatula to scrape the icing off the remaining dough. Of course, it is not possible to scrape off the icing completely, but just try to remove the coarsest bits.

Now knead the remaining dough together again, add a few ground almonds and, if necessary, some cinnamon and knead everything again until the almonds have absorbed the moisture and the dough is as before. Then roll it out again on a little granulated sugar.

Now repeat all the steps again - brush on the icing, cut out the stars and place them on the baking paper. Bake the finished stars in the preheated oven for 5 to 8 minutes. Then leave them to cool directly on the tray.

Storage & shelf life

The finished, delicious cinnamon stars can be kept for up to a month in a biscuit box.

    Ich habe bewusst nur 110 g Zucker genommen. Trotzdem ist es mir zu süss.

    Danke für Deinen Kommentar. Das ist natürlich auch Geschmackssache. Du kannst die Süsse auch regulieren, indem Du weniger Glasur auf die Zimtsterne aufträgst.
