Switzerland's bank holidays is just around the corner and what better way to celebrate this special occasion than with a delicious Swiss cookie? The "August Cookie" is a biscuit that we created especially for this holiday and symbolises the festive spirit of Switzerland. With its distinctive Swiss cross in the centre, this cookie is not only a delicious treat, but also a wonderful way to show solidarity with our beautiful country.
1 August is an important public holiday in Switzerland, when people celebrate the existence of the Swiss Confederation as a sovereign state. It is a day full of patriotic shows, various events and community celebrations. In the midst of this festive atmosphere, savouring traditional Swiss biscuits is a cherished tradition.
The August Cookie is a new creation from us and is designed to sweeten your day on this special occasion. With its sweet and crispy texture, it is the perfect accompaniment to a cup of coffee or tea. The cookie is made from high-quality ingredients to ensure that it is not only delicious but also of the best quality.

Cookie ingredients

Granulated sugar50 g

Filling ingredients

Granulated sugar55 g
Coconut shreds30 g
Egg white | liquid20 g
Butter5 g
White flour 7 g

Production of the Swiss cross

To make the cross, place all the ingredients except the flour in a small pan and toast on a low heat until the mixture becomes a little thicker. Stir constantly so that the egg white does not start to set. Finally, add the flour and stir a little more. The mixture will now be much more compact. Pour it into a bowl and leave it to cool.

As soon as the mixture has cooled, you can roll it out on a floured work surface to a thickness of 5 mm using rolling pins and cut out small Swiss crosses with a cross cutter. Put these to one side until your cookies are ready.

Making the vanilla cookie

Using a hand mixer, beat the softened butter with the granulated sugar, vanilla seeds and a pinch of salt until light and fluffy. Then add the whole egg and mix in well. Now add the flour and mix in at low speed. Then pour the crumbly mixture onto your work surface and knead it with your hands until you have a homogeneous, smooth dough. Then add the red food colouring and knead it in until the dough is uniformly red. You can determine the intensity of the red colour yourself. Press the dough flat, wrap it in cling film and put it in the fridge for at least an hour.

Preheat the oven to 170 ºC fan oven.

Take the dough out of the fridge after the chilling time, knead it briefly and roll it out to a thickness of 5 mm on a floured work surface using rolling pins. Now cut out the dough with a square cutter (7x7 cm) and place it on a baking tray lined with baking paper. Now cut out a cross in the centre with the cross cutter and fill it with the prepared coconut cross. Bake the 1st of August biscuits in a preheated oven at 170 ºC for 10 to 15 minutes. Then leave to cool and enjoy!

Storage & shelf life

The best way to store the finished cookies is in a biscuit tin. They will keep there for approx. 2 weeks.
